How to Make Sugar Free Banana Bread Step-by-Step
-
Step 1
Preheat your oven to 350°F (175°C). Make sure the oven is fully heated before placing the bread inside - this guarantees even rising and proper texture.
Lightly grease a standard 9×5-inch loaf pan with a thin layer of butter, making sure to coat the corners and sides. For easier removal, line the pan with parchment paper, leaving a small overhang on the long sides so you can lift the bread out later. Do not skip greasing or lining, or the loaf may stick after baking. -
Step 2
Peel the bananas and place them in a large mixing bowl. Using a fork or potato masher, press and mash until the mixture becomes smooth and thick.
It is important that no large banana chunks remain. The texture should resemble a thick puree with only very tiny soft lumps. The smoother the bananas, the more even the sweetness and moisture throughout the bread. -
Step 3
Pour the melted butter into the mashed bananas. The butter should be melted but not hot - if it feels very warm to the touch, let it cool for a few minutes before adding.
Crack in the eggs one at a time and whisk thoroughly after each addition. Stir in the vanilla extract and mix until everything becomes smooth and glossy. No streaks of egg should be visible, and the mixture should look uniform and slightly creamy. -
Step 4
In a separate bowl, whisk together the flour, baking soda, and kosher salt. Mixing them first ensures the baking soda distributes evenly, which helps the bread rise properly.
Gradually add the dry ingredients into the banana mixture. Using a spatula, gently fold the batter by lifting from the bottom of the bowl and turning over the mixture. Do not overmix - stop as soon as no visible dry flour remains. Overmixing develops gluten and can make the bread dense instead of soft. -
Finish
Pour the finished batter into the prepared loaf pan. Smooth the top gently with a spatula so it bakes evenly.
Place the pan on the center rack of the oven and bake for 50-55 minutes. To check doneness, insert a toothpick into the very center of the loaf - it should come out clean or with a few moist crumbs but no wet batter. If the top browns too quickly, loosely cover it with foil during the last 10-15 minutes.
Allow the bread to cool in the pan for 10-15 minutes. Then carefully lift it out and transfer to a wire rack. Let it cool completely before slicing - cutting too early may cause the crumb to appear gummy.
