Preheat your oven to 350°F (175°C). Make sure the oven rack is positioned in the center so the loaf bakes evenly from top and bottom.
Lightly grease a standard 9×5-inch loaf pan with a thin layer of oil, or line it with parchment paper, leaving a slight overhang on the long sides. This overhang will help you lift the bread out easily after baking. The pan must be fully prepared before mixing the batter so you can transfer it immediately. -
Step 2
Peel the bananas and place them in a large mixing bowl. Using a fork or potato masher, press and mash until the mixture becomes smooth and thick.
Small soft lumps are fine, but there should be no large chunks remaining. The final texture should resemble thick applesauce. Properly mashed bananas ensure even sweetness and a moist, uniform crumb. -

Add the eggs, Greek yogurt, brown sugar, neutral oil, and vanilla extract directly into the bowl with the mashed bananas.
